I love Chicken Enchiladas! This however was not the best. Our tortilla was also mushy, which really ruined the overall taste. I am going to try again and not leave them in as long.

We did not like the tortilla...they were gummy... we made it again this week and used pasta (Ziti) and it was a lot better.

I usually make enchiladas from scratch which takes a long time so I thought I'd try this quicker recipe. I was not dissapointed!! I omitted the oil and used cooking spray to save on some fat & calories. I also added some taco seasoning to the chicken when it was cooking and a can of black beans before adding the tortillas. It was very easy to make, had a lot of flavor and was very satisfying. Great quick weeknight meal!!!

I added Cumin to the meat as I cooked it, which gave a real "Mexican" flavor to it. My picky Husband LOVED it and I will definately make this again. I'm going to try it again with Pork and again with Shrimp!

I REALLY loved this recipe! It's very easy and quick to make, and if you love enchilada's, you'll love this spinoff. it's just a one-pan dinner, and it's cheesy, gooey, and tasty! I added spices to the chicken while cooking. I put more cheese in, too...cause we love cheese. I would definetely serve with sour cream. Mine actually looked almost identical to the picture! I am definetely making this easy and yummy dish again for me and my husband!

As this recipe is published, it's fun, easy, kid-friendly... but a little bland. We gave it a little more tasty zip with sauteed onion & garlic added to the chicken stage, plus some sour cream & chopped cilantro to top the whole thing off (which made it prettier too). Yes, it was a big hit with the kids, and an easy weeknight meal. Thanks for simplifying our busy day.

Great recipe, we used leftover chicken from some chicken tacos, so the chicken was really flavorful. We also like things spicy so we added a ton of spicy seasoning. We used half the ranch and supplemented the other half with some enchilada sauce, and we also added some black beans. Next time we plan to add some jalapenos and some mexicorn! It was easy, and tasted great! I am a teacher and this makes a great leftover lunch, all the other teachers asked me about my wonderful looking meal. I do wonder where they got that picture from, because that is nowhere near what our food looked like, and even if we used the right ingredients, I don't know how we could possibly get the food to look like that! Either way, it will be added to the list, and tastes great!
