Great recipe, we used leftover chicken from some chicken tacos, so the chicken was really flavorful. We also like things spicy so we added a ton of spicy seasoning. We used half the ranch and supplemented the other half with some enchilada sauce, and we also added some black beans. Next time we plan to add some jalapenos and some mexicorn! It was easy, and tasted great! I am a teacher and this makes a great leftover lunch, all the other teachers asked me about my wonderful looking meal. I do wonder where they got that picture from, because that is nowhere near what our food looked like, and even if we used the right ingredients, I don't know how we could possibly get the food to look like that! Either way, it will be added to the list, and tastes great!

my husband and i loved this!! very easy to make and sooo good! i think next time ill put more tortillas in it. otherwise it was wonderful! will definitly make again!

This recipe was so awesome, my family loved it. It tasted like Mexican chicken & dumplings. It was so easy to make. I did double the cheese. It was sooo yummy.

Much easier than traditional enchiladas! I added a can of green chilies and a few shots of hot sauce for a bit of heat and used whole wheat tortillas and a can of drained pinto beans for fiber. This is a real keeper!

I love this variation my recipe has a red sauce. I just love this recipe. I have made it once before and I will be making this tonight.

I loved this recipe! It's so easy and it was delicious :) Of course it is alot of calories, but you can use reduced or fat free ingredients to lessen the calories and fat.
