Super-Easy Chicken Enchilada Skillet recipe
This tasty chicken enchilada skillet cuts down on prep without cutting flavor. Just cut up the tortillas and stir them in with the chicken.

I thought this recipe was very blah. It did not have enough flavor. If I were going to make it again I would definately doctor it up a lot!

I really liked this but the kids HATED it...I served it on top of refried beans with shredded lettuce, crushed tortilla chips and salsa on top and it tasted much better. I just pulled the recipe from the magazine, I wish I came here first for the other great suggestions!

It wasn't too exciting.

Made this last night and it was actually quite good. I will definately add this to my revolving menu. As others did, I used green chile enchilada sauce instead of the ranch dressing and added black olives and a little onion to the mix. The flour tortillas were a little soggy so I'd recommend putting them in just before adding the cheese. Served with an avocado, tomato and onion salsa this is a quick and delicious winning recipe.

Add enchilada sauce and cream cheese. Left out the dressing, broth and flour. Used corn tortillas so it wouldn't get mushy. Garnished with sliced black olives for some color. Good quick meal!

Very easy to make, although I would add enchalada mix to the chicken to spice it up. Great as a leftover.

I have a version of this recipe that I developed with left over ingredients. I used green enchilada sauce (28 oz) and the broth - omitting the salad dressing and using corn tortillas - corn is less gummy. Don't forget the cheese. I served it with a green salad that included black olives, red bell peppers, diced avocado and chopped cilantro

I used a can of enchilada sauce and only a cup of the chicken broth. Very good and had lots of flavor I will be making it again.
