What You Need

cups fresh broccoli florets

can (14-1/2 oz.) fat-free reduced-sodium chicken broth

cups instant white rice, uncooked

1/2

lb. (8 oz.) VELVEETA®, cut into 1/2-inch cubes

1-1/2

Tbsp. butter

RITZ Crackers, crushed

Tbsp. KRAFT Grated Parmesan Cheese

Make It

BRING broccoli and broth to boil in medium saucepan on medium-high heat. Stir in rice; cover. Remove from heat. Let stand 5 min. Stir in VELVEETA. Let stand, covered, 5 min. Stir until VELVEETA is completely melted. Spoon into microwaveable bowl; cover with plastic wrap. Refrigerate up to 24 hours.

MEANWHILE, melt butter in small skillet on medium heat. Add cracker crumbs; cook 2 to 3 min. or until golden brown, stirring frequently. Cool completely. Stir in Parmesan; spoon into resealable plastic bag. Seal bag. Store at room temperature up to 24 hours.

COVER broccoli mixture with waxed paper. Microwave on HIGH 5 to 6 min. or until broccoli mixture is heated through; stir. Sprinkle with crumb mixture. Microwave, uncovered, 2 to 3 min. or until heated through.

This was a big hit at Thanksgiving. I added a little more broccoli, bite-sized, and doubled the crumb topping. Will definitely make again, so easy.

I am in college and make this often. It makes great leftovers. I didn't make it ahead of time, just put the pan in the microwave for a few minutes when I was done with the other steps. I used low-fat chicken broth and it was good; I also used Minute brown rice.

I made this for my entire family and was so disappointed. 2 out of 10 people liked it. It was so bland and boring. You couldn't taste the cheese at all.

I made this as an side to a roasted chicken. I used the low fat velveeta. It wasn't cheesy enough for me. I mixed the left over rice with the left over chicken and had Chicken Divan two days later. A multi- purpose dish. :o)

I used frozen broccoli instead of fresh and just cut the pieces smaller after it thawed a little bit. I will definitely make this again! Oh, and I used mexican Velveeta instead of plaine... very good (and easy)!!!

This was wonderfully easy and I took it to a potluck. I used the Brown Minute rice and added a can of mushrooms. I also added 1/4 C sharp cheese when I did the microwaving. I was told it was the best dish at the luncheon.

Very easy to make and tastes great. I used regular rice with more chicken broth and it tasted great. Very easy and it does reheat well.

I used more chicken broth than what the recipe called for and it turned out great. Overall, great dish!

I made this recipe and thought it was very easy and quick. I cheated though and didn't make it ahead, instead i just put it in the oven just long enough for the crackers to brown on top after i cooked it all on the stove. I thought it was much better than the old cheese wiz way my mom taught me, and the velveeta tasted much much better!!!
