My family loved this one! It doesn't make as much as my other egg casserole does, and prep time is half the time and half the mess! So far, this is my favorite breakfast casserole! Vicki K.

This was delicious and soo easy to make! The only thing that I would do different would be toadd diced onions when I make it again.

My girlfriends and I made this for Easter brunch. It was wonderful. We decided it would be really great with sausage too.

I've made this recipe twice so far for two separate functions. It was a huge hit both times. The only thing I changed was substituting Turkey Bacon for Pork Bacon. It cuts back on a little bit of fat in an already healthy meal.

I make variations on this recipe. I will substitute different flavors of stuffing, with different meats and vegetables. Like Ham or chicken and broccoli. I will also make it for dinne rand my daughter will have a healthy breakfast the next morning.

This was just delicious! I substituted fresh spinach for the frozen which added to the prep time, because you have to stir it up a lot to ensure that the ingredients are mixed. Also added 2 whole eggs in addition to the 2 eggs + 2 egg whites, but everyone raved about it! I took it to my school to feed our Science Fair Judges. They were all impressed and would have given me a "blue ribbon" if I'd been eligible.

A big hit at brunch this week. Make sure you get the red pepper, that makes it so pretty!

I used 4 eggs instead of the egg whites. It went to church brunch with me and was a hit!

Very good. Easy to make and full of flavor. I love the spinach. I used green peppers instead of red.
