This is a great recipe. I have made it several times. I make it without the crust to make it low carb, still tastes great.

Fantastic recipe. My husband and I both loved it. I doubled the cheese,used real mayonnaise and covered the edge of pie crust to prevent overbakig and served with the Ambrosia Salad - I will be making this again and again and again and........
Fantastic! I am always looking for a quick meatless dish for my vegitarian daughter. (I am always making two meals) This is one EVERYONE can agree on. I added more cheese, but that was the only modification. Great family meal. I severed it with a small side salad.

I just made this for my dinner. It was the first time I EVER made quiche! So easy and wonderfully tasty! I too added some sea salt and pepper to the veggies. I also added some shredded cooked chicken and the roasted peppers. Will absolutely make again and again.
I've made this several times. Our 4 year old loves it too. Our favorite combo is 3 cups red and yellow peppers and Italian cheese. It can be a bit bland. I haven't quite worked out the seasonings yet, but we use BVI Caribbean Seasoning at the table and that works.
Love, love, love this recipe! Have made it 4 times since December 8th and am making it again today. I usually use light mayo instead of Miracle Whip and double the veggies. I also salt the veggies when cooking and add ham or bacon. The most recent time I made it I mixed sharp cheddar and Pepper Jack and it gave it a great kick but not too much heat. YUM YUM!
This was so easy to make, and was so yummy. My 2 year old who hardly eats anything, asked for seconds. I don't usually like mushrooms, but didn't mind them in this. I will definately make this again
