A.1. Roasted Potatoes

A.1. Roasted Potatoes recipe

Drizzled and baked with a mix of olive oil and a savory peppercorn dry rub, these hand-cut strips of Yukon gold potatoes give fries a run for their money.

What You Need

cup  olive oil
Tbsp.  A.1. Dry Rubs Cracked Peppercorn
lb.  large Yukon gold potatoes (about 12), cut into 1/4 inch-thick strips

Make It

HEAT oven to 400ºF.

COVER rimmed baking sheet with foil; spray with cooking spray. Mix oil and dry rubs until blended.

SPREAD potatoes onto prepared baking sheet. Drizzle with oil mixture; toss to evenly coat potatoes. Spread to form even layer on baking sheet.

BAKE 45 min. or until potatoes are crisp and golden brown.

Purchasing Potatoes
Look for firm, smooth, well-shaped potatoes that are free of wrinkles, cracks and blemishes. Avoid any with green-tinged skins or sprouting "eyes" or buds.
