    Not a huge eggplant fan, but boy did the flavor in the chicken and how tender it was completely make up for it. When I make it again, I'm going to skip the eggplant and maybe do squash or something else.

    Next time I will heed the advise and pre-cook the potatoes a bit. It was easy and delicious (and hardly any dishes to wash)!
