I've made mac & cheese from scratch in the summer when we've had garden vegetables to add to it, but I never thought of making a version like this during the winter. Now I'll be making it like this all the time. Thank you for a wonderful idea.

I made this recipe a few nights ago, although I used california blend vegetables and added some velveeta to cheese it up. Also I put in a casserole dish covered it with shredded cheddar cheese and baked for about 30 min at 350. So good and creamy, my husband loved it!

It was creamy, and the combo of the vegetables and mac n cheese is very good. I made this as a main dish and served with some fruit. I definately recommend to anyone looking for an easy weeknight dinner.
