Rated 4 out of 5 by from the almonds covering the chicken held in all the juices and made it very tender. the almonds covering the chicken held in all the juices and made it very tender. the taste consisted of mostly the mustard, even ater adding some spices like garlic powder and poultry seasoning. next time i think i will add more seasonings to add depth to the taste. one problem i had was the cooking time of the chicken--i had to cook it about twice the time reccomended before the it was 165. all in all, a great recipe and my boyfriend absolutely loved it.

The first time I made it, I did as the recipe says and put the almonds on before going in the oven and they all burned. The next time I made it I put the almonds on half way through the baking time and they did not burn. I have also just toasted the almonds in my toaster oven and put them on when I took the chicken out of the oven. Very delicious and easy to make. Throw in a green salad and you've got dinner!

I'm on a low carb diet your use of some non descript carbs (modified food starch, gums and other sugars) in the dressing to replace fats in order lower the caloric value of the recipe adds more modified food starch than I care to eat. A little fat in regular dressings go a long way to make something taste good. Try the recipe with Real Mayonnaise and it was good.

Two minutes preparation, some steamed vegetables and a whole wheat pasta side make this any easy any night dinner! From start to eating, about 35 minutes. Too easy! My husband wants me to try it on a hearty fish (he wants me to try salmon), which I intend to do. I think it will be another delicious entree!

Rated 5 out of 5 by from Loved this! Loved this! My husband called this recipe a "slam dunk". I cut the breasts in half, then placed b/t wax paper and pounded the chicken to 1/2 inch. I also put some marinated artichoke hearts in the baking dish. I covered w/ foil for half of the cooking time, and uncovered for half to brown the almonds. Fabulous, and cooked in 25 min.

Rated 4 out of 5 by from This reminds me of a similar low carb recipe my whole family loves. This reminds me of a similar low carb recipe my whole family loves. Wash 1 whole head of cauliflour and put in micro dish with 1/2 cup water. Cover and micro 10 min. Drain water. Mix 1/4 cup mayo and 2 T brown spicy mustard and spread on cauliflour. Sprinkle liberally with grated cheese (about 1/2 cup) and micro 1 more minute. Enjoy.

Rated 5 out of 5 by from This was Delicious ! This was Delicious !! I used 6 skinless breasts and put more mayo and used Honey mustard instead. Also Melted 2Tbsp margarine and stirred in a cup of bread crumbs with my almonds to put on top. Cooked 375 degrees for 40 min. Covered with aluminum the first 20 minutes then uncovered so almonds and bread crumbs could brown. Very Good !!!

I used honey-dijon mustard instead of plain dijon, added the nuts after cooking to keep from getting soggy and also drizzled extra mayo-mustard sauce over chicken just prior to serving and it is a hit! Friends/family have requested this recipe and they pass it on to their friends and family! A definite keeper!
