  • Preheat oven to 400°F. Mix rice, pineapple with juice, broth and green peppers in 13x9-inch baking dish.
  • Measure 1/2 cup coating mix and place in plastic bag; coat chicken strips as directed on package. Place chicken on rice mixture.
  • Bake 30 minutes or until chicken is cooked through.

Substitute

Substitute red pepper for the green pepper.

Creative Leftovers

For a quick burst of flavor, sprinkle unused SHAKE 'N BAKE Coating Mix over hot cooked vegetables or tossed green salads.

I did make some changes to the recipe after reading the other reviews - I only used the pineapple juice along with the broth and I mixed some teriyaki sauce with some brown sugar and put that with the rice. I also breaded the chicken with Panko flakes, which turned out crispy. Will make again!

I changed it just a bit--a little more chicken broth, and I added 1/4 cup teriyaki sauce and 1/4 cup brown sugar to the liquids. Also used unbreaded chicken very yummy soaked up all the terriyaki sauce with just the right amount of liquid left.

Rated 2 out of 5 by from Was very simple/quick to make. Was very simple/quick to make. Had a very "interesting" taste. My family complained that the chicken had no taste. So if I decide to ever make this again, I would add a tiny bit of salt/pepper to the bread crumbs before coating the chicken.
