Amazing Coconut Pie recipe

Laced with raisins and coconut, this easy pie is made in a blender. As it bakes, a crust magically forms. Serve warm or cold for a delicious dessert.

What You Need

cups  milk
cup  sugar
cup  all-purpose baking mix
cup  (1/2 stick) butter or margarine, softened
Tbsp.  brandy (optional)
tsp.  vanilla
cup  raisins
cups  (1/2 of 7-oz. bag) BAKER'S ANGEL FLAKE Coconut

Make It

PREHEAT oven to 350°F. Place milk, sugar, baking mix, eggs, butter, brandy and vanilla in blender container; cover. Blend on low speed 3 minutes. (Or, shake vigorously in tightly covered 2-quart jar 30 seconds.)

POUR into greased 9-inch pie plate. Sprinkle with raisins and coconut.

BAKE 40 minutes or until pie is set in center and top is golden brown. Cool on wire rack. Serve warm or at room temperature. Store leftover pie in refrigerator.

Beat butter and sugar in large bowl with electric mixer on medium speed until light and fluffy. Beat in eggs, brandy and vanilla. Add baking mix alternately with milk, beating well after each addition. Pour into greased 9-inch pie plate and continue as directed.
How to Prevent Pie Filling Spillovers
Placing a custard-type pie in the oven without spilling can be challenging. Stop spillovers by placing the pastry-lined pie plate on a baking sheet. Pour the custard filling into the crust, then place the baking sheet on the oven rack. This method stabilizes the pie and prevents the filling from spilling over the edge of the pie plate.
