  • Cook and stir onion in butter in large saucepan on medium-high heat until tender. Add potatoes, water, celery and pepper. Bring to boil. Reduce heat to medium-low; cover. Simmer 15 minutes or until vegetables are tender.
  • Stir small amount of the milk into flour until well blended. Gradually add flour mixture to hot vegetable mixture, stirring constantly. Stir in remaining milk and the Smokies; cook until mixture boils and thickens, stirring constantly.
  • Add VELVEETA; cook until completely melted, stirring frequently.

Substitute

Prepare as directed, using 2% Milk VELVEETA.

Rated 5 out of 5 by from OMG my boyfriend and his son love this. OMG my boyfriend and his son love this. They call it MAN SOUP. If you think about it, it really is exactly what guys like; meat, potatoes, and cheese. I use beef kelbasa. I also cook the kelbasa before adding it just so that it can get alittle crunch on it. It adds some texture to the meal. They always want this on Sunday, it's Football Food.

I used turkey kielbasa and 2% Velveeta and also added more vegs (carrots, mushrooms, chives). It just seemed kind of bland to me. I may try it again and spice it up a little bit b/c I like the ingredients themselves. Maybe it would be good with hamburger?

I doubled the recipe and kept in warm in a crock-pot. It was a huge hit, though it wasn't quite as cheesy as I expected. This is definitely one of my favorites because it was so easy, inexpensive, and compatible to anyone's tast.
