  • Cook potatoes in boiling water in saucepan 15 min. or until tender; drain.
  • Mix mayo and mustard in large bowl. Add potatoes, bacon and chives; mix lightly.
  • Refrigerate at least 1 hour.

Substitute

Substitute sliced green onions for the chopped chives.

I think it best, but not necessary, to make this a day a head of time so the flavor of the chives can take hold, but wait until you serve it to add the bacon so it will still be crunchy. l also added salt and garlic powder to zip up the taste. I added about 3 times the mustard as called for to give it more flavor. I had some rave reviews from this recipe, especially after it had set in the frig for a day. The next time I make this I am going to add onions.

Rated 2 out of 5 by from I would make this again. I would make this again. BUT I didn't like it the first time I made it. Next time I will add more Mayo and Dijon mustard. It tasted a little bland. I also will serve it hot. The bacon is not very good cold.
