Angel Pecan Pie

This chilled crustless pie is made with crushed buttery crackers, chopped pecans and beaten egg whites. After baking, it’s crowned with whipped cream.

egg whites

1/2

tsp. vanilla

cup sugar

RITZ Crackers, finely crushed (about 1 cup crumbs)

cup finely chopped PLANTERS Pecans

1/4

tsp. CALUMET Baking Powder

cup whipping cream, whipped

Make It

PREHEAT oven to 350°F. Beat egg whites in large bowl with electric mixer on high speed until soft peaks form. Blend in vanilla. Gradually add sugar, beating until stiff peaks form. Mix crumbs, pecans and baking powder. Add to egg white mixture; stir gently until well blended. Spread into greased 9-inch pie plate.

BAKE 30 min. Cool completely.

REFRIGERATE 6 hours or overnight. Spread whipped cream over pie to cover completely.

I love this pie. My mother used to make it in the 1970s. I recently brought it into work for an office party and everyone said it was delicious. If you have a large group, make two pies. Your guests will thank you. For the pecans, I grind them. I don't know if that makes a difference, but the pie always turns out nice.

Excellent pie, used whole wheat ritz crackers instead of regular and pie was just awesome, would make again for sure.

I used to make this "Ritz Pie" many years ago when my children were small-it was a big hit at neighborhood gatherings, etc. I lost the recipe and tried so hard to remember how to make it, but couldn't recall. I'm so happy to have it again; I recently made it for a "ladies" luncheon, and they loved it, especially with almond extract in the cream!

A local diner used to make a Ritz Nut Pie years ago and it was a favortite! I have searched for this recipe and have finally found it! It is wonderful! Will definately make again!

I made this recipe back in Jr High School home economics class and it's been favorite since. I've moved several times since then and lost the recipe which I've been looking for since I married. Now I can make one of my all time favorite desserts for my family.

Perhaps I beat the egg whites too long in order to get the "peaks" the recipe mentioned, but it was actually crusty on top and difficult to eat. The center of the pie was absolutely dilicious, but the top ruined it. Not sure that I will try making it again.

I made this recipe about fourty years ago, when I first came to the U.S. My husband's aunt made it and I lost the recipe. The aunt died 25 years ago. I looked in cookbooks and could not find it anywhere. Thanks to your website I can introduce this lovely pie to my children and grandchildren.

I have made this for years, but the receipe I use called it a Ritz Cracker pie. It is asked for every holiday. Everyone loves it and it is always a hit.
