  • Score meat by making shallow criss-cross cuts across surface; place in shallow pan. Mix remaining ingredients; pour over meat. Refrigerate 1 hour to marinate.
  • Heat oven to 375°F. Bake meat, uncovered, 1-1/4 to 1-1/2 hours or until 150°F, basting occasionally with pan juices.
  • Remove meat from oven; cover with foil. Let stand 15 min. or until medium doneness (160ºF) before slicing.

Cooking Know-How

Low and slow roasting creates a juicy, tender and very lean roast. Be sure not to cook oven roasts beyond the medium-rare state or you'll risk having tough, dry meat.

Special Extra

Serve this delicious roast with an easy horseradish cream sauce. While meat is baking, mix 1/2 cup BREAKSTONE'S or KNUDSEN Sour Cream, 2 Tbsp. KRAFT Prepared Horseradish and 1 tsp. GREY POUPON Dijon Mustard until well blended. Refrigerate until ready to use.

Make Ahead

Meat can be marinated up to 24 hours before baking as directed.

Ratings & Reviews

Rated 4 out of 5 by from I marinade the meat overnight. I marinade the meat overnight. I put it in the crock pot on low all day with potatoes and carrots. I did add a little water. But this didn't change the flavor. My family loved it. The horseradish didn't over power the meat. My teenagers didn't even know I had horseradish in it till they heard me tell my husband about the marinate.

Rated 4 out of 5 by from This gave the roast a very nice flavor and was super easy. This gave the roast a very nice flavor and was super easy. I only baked it at 350 and did not cook it for the almost three hours they suggested...I just baked it for about 40 min. a lb. and left it uncovered. I think if you roasted it according to the directions, you would have shoe leather instead of dinner.

Rated 5 out of 5 by from This is so simple! This is so simple! I recommend marinating the roast overnight in a large ziploc, which makes for easy clean-up. The roast turns out very juicy and full of flavor. It can be served for a special occasion or it makes for great comfort food during a crazy week night. Kids love it too!

Rated 4 out of 5 by from The roast came out very tender! The roast came out very tender! I think I will leave the rosemary out next time and add Garlic Powder instead. I have never been a fan of Rosemary, but I still thought I would give it a try this time. Even so, it really was excellent. Tasted so much like Prime Rib....

Rated 4 out of 5 by from Great recipe and easy to make. Great recipe and easy to make. Used horseradish sauce instead and came out great. Put some more horseradish sauce on the side for dipping. Served this with baked sweet potatoes and the zesty roasted veggie recipe. Used the leftovers for sandwiches. Was great!!

Rated 5 out of 5 by from I love this recipe. I love this recipe. I haven't made a beef roast for sometime and was having company for dinner. It was a huge hit and everyone loved it. The longer you marinade this roast the better. And try straight horshradish sauce from the jar. It gives it a real kick!
