FRY the bacon. Drain on paper towels and cut each strip into thirds.
LIGHTLY, butter both sides of each slice of bread.
OVER low heat, grill all six slices of bread until toasted golden brown on one side.
TURN the bread over and on each of three of the slices, layer one and a third slice of cheese, 4 apple slices and 5 of the bacon pieces.
PLACE the remaining three slices of bread, warm side down on top of the sandwich filling to begin melting the cheese.
COVER the grill for 30 – 60 seconds to continue melting cheese and browning the bread.
FLIP all three sandwiches and brown the other side.
REMOVE from the grill and serve with fresh fruit and your favorite beverage, for a quick and easy lunch.
