This classic lemon gelatin salad is made with chopped apples, shredded carrots and apple juice. Serve it year-round at a brunch, lunch or dinner.

what you need

cups  boiling water
1
pkg.  (8-serving size) JELL-O Lemon Flavor Gelatin
1-1/2
cups  cold apple juice or water
1
medium  apple, chopped
1
medium  carrot, shredded

Make It

STIR boiling water into dry gelatin mix in large bowl at least 2 min. until completely dissolved. Stir in juice. Refrigerate 1-1/2 hours or until thickened (spoon drawn through leaves definite impression).

STIR in apples and carrots. Spoon into 5-cup mold sprayed with cooking spray.

REFRIGERATE 4 hours or until firm. Unmold.

Substitute
Prepare as directed, substituting 2 pkg. (4-serving size each) JELL-O Lemon Flavor Gelatin for the 8-serving size package.
How to Unmold Gelatin
Dip mold in warm water for 15 sec. Gently pull gelatin from around edge with moistened fingers. Place moistened serving plate on top of mold; invert mold and plate. Holding mold and plate together, shake slightly to loosen. Gently remove mold and center gelatin on plate.
