Omit cinnamon. Do not spray apple slices with cooking spray. Toss apples with combined 1 Tbsp. each lemon juice and water; pat dry. Bake as directed. If you like sweeter apple chips, mix 1 Tbsp. sugar with the lemon juice and water before tossing with the apple slices.
Store in airtight container at room temperature.
Use a mandolin or sharp knife to cut the apples into thin slices as directed.
