  • Mix flour, baking powder, salt, cinnamon and baking soda; set aside. Mix remaining ingredients in medium bowl. Add flour mixture; stir just until moistened.
  • Spoon into greased or paper-lined muffin pan, filling each cup 2/3 full.
  • Bake at 400°F for 25 minutes or until golden brown.

Storage Know-How

Prepare as directed; cool completely. Place in sealable plastic bag. Freeze up to 2 weeks.

This recipe says you can make 10 scones by dropping on greased cookie sheet by "SCANT" 1/4 cup----even at a FULL 1/4 cup I GOT 15 scones, which I wouldn't normally complain about EXCEPT, the flavor has not good and I followed the recipe exactly..Not enough apple or cinnamon taste..I used a large Ganny Smith apple too. Also watch your oven closely as 400* for 25 mins. would have been too long by about 6 mins....Will not make again...Muffins could probably be helped with flavor by topping them before baking with a brown sugar, cinnamon, butter crumb topping. Not sure and won't try again in muffins just to find out either.

Rated 3 out of 5 by from These were good. These were good. Nothing I'd rave about. The batter was so dry that not all of the flour would mix in so I added quite a bit of unsweetend applesauce. I took people's advice and added more cinnamon and vanilla then the recipe called for but I still didn't get a flavor pop. I'm gonna try having one for breakfast in the morning, warm and with butter. These are good just not extrodinary.

Rated 4 out of 5 by from My 2 year old loved these. My 2 year old loved these. The batter is very thick but don't be fooled by it. The muffins come out tender and very moist. You'd never guess there was cottage cheese in them if you didn't have the recipe. My batch made 24 mini muffins and 6 regular muffins. Next time I'd try adding more cinnamon and/or vanilla to kick up the taste a bit.

The first time I made these muffins, I did not have the baking soda, the second time I did not have the cottage cheese so I added a little milk. Both times they turned out great--they are yummy in the mornings. I even put them in my husbands lunch and he enjoys them also. Thanks for a great website and tons of scrumptious recipes!!!

Rated 3 out of 5 by from I like that the muffin isn't too sweet. I like that the muffin isn't too sweet. The suggestion that some had to add applesauce is a good one. My only complaint is while I like what the cottage cheese adds in flavor I think where it touched the bottom of the pan, the cheese curds were chewy, so next time I think I'll try pureeing it before adding it in.

I subsituted an 8oz brick of cream cheese for the cottage cheese (because I didn't have any). And I doubled the recipe and used 2 3.9 oz containers of the grannysmith flavored applesauce. I also used several Gala apples instead of the grannysmith. Made 2 dozen muffins on heavily greased muffin tins. Delicious!

Topping ..... 1 cup chopped PLANTERS Pecans 1/3 cup firmly packed brown sugar 1-1/2 tsp. ground cinnamon MIX pecans, brown sugar and cinnamon. Spoon the pecan mixture on top of the uncooked muffins then bake.

This time I followed everything to the T but left them in for 20 minutes instead of 25. What a difference! Very moist this time around. They do lack a little something so maybe next time I may try a little more cinnamon and vanilla.
