  • Heat oven to 400°F.
  • Combine flour, oats, baking powder, pumpkin pie spice and 1/2 cup sugar in large bowl.
  • Whisk egg, sour cream, apple juice and oil until blended. Add to flour mixture; stir just until moistened. (Batter will be lumpy.) Stir in apples.
  • Spoon into 12 paper-lined muffin cups.
  • Bake 18 to 20 min. or until toothpick inserted in centers comes out clean. Sprinkle with remaining sugar. Cool in pan 5 min. Remove to wire rack; cool completely.

Storage Know-How

Store any leftover muffins in airtight container at room temperature up to 3 days. Or for longer storage, place muffins in freezer-weight resealable plastic bag; freeze up to 6 months. If frozen, thaw at room temperature before serving.

Substitute

Substitute ground cinnamon for the pumpkin pie spice.
