  • Preheat oven to 400°F. Mix flour, baking powder and salt in large bowl. Mix cereal and milk in medium bowl; let stand 3 minutes. Stir in egg, applesauce, sugar and margarine. Add to flour mixture; stir just until moistened. (Batter will be lumpy.)
  • Spoon batter into muffin pan sprayed with cooking spray, filling each cup 2/3 full.
  • Bake 20 minutes or until golden brown. Serve warm.

How to Make Jumbo Muffins

Spoon batter into 6 (6-oz.) ovenproof glass custard cups sprayed with cooking spray. Sprinkle additional cereal over batter before baking, if desired. Bake 25 to 30 minutes or until golden brown. Makes 6 servings.

    I have made these several times. I add 1 t cinnamon and 1 diced fine apple. I also make a simple glaze for the top, 1/2 c powdered sugar 1/2 t cinnamon and 1 T buttermilk. Everyone at church asked me for this recipe after I served them.
