  • Mix flour, baking powder, cinnamon and salt in large bowl. Beat egg in small bowl; stir in applesauce, sugar, milk and oil. Add to flour mixture; stir just until moistened. (Batter will be lumpy.) Stir in cereal and walnuts.
  • Pour into 9x5-inch loaf pan sprayed with cooking spray.
  • Bake at 350°F for 55 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pan. Cool completely on wire rack.

Note

For easier slicing, wrap bread and store overnight.

I didnt have chunky applesauce so i used some MOTTS cinnamon applesauce then I cut some apple chunks into. I think this is why it tasted so good. I thought it was a little to cinnamony with the applesauce but no one else did. Thanks! Also it didnt take as long of a cook time.

I don't think I'll cook it the full 55 minutes next time to make is more moist. I also used the new brown sugar splenda and it still tasted good and saved some calories... I would definately serve this warm, it's much better that way! Great with my morning coffee;)

I am planning to use this for Holiday mini loafs for Christmas giving. You can easily double the ingredients and within an hour have 8 loaves to give to other people. Freeze it and you will be well ahead of the Christmas Rush.

Rated 3 out of 5 by from When I make again I'll us regular applesauce, I didn't care for the chunky. When I make again I'll us regular applesauce, I didn't care for the chunky. I did mix up some raw suger and cinnamon and sprinkle on top before baking. I will also add more cinnamon to the recipe.
