  • Heat oven to 400°F.
  • Mix meat, salsa, corn, carrots and bread crumbs just until blended; press onto bottom of 9-inch pie plate.
  • Bake 30 min. or until meatloaf is done (160ºF). Meanwhile, cook potatoes and cauliflower in boiling water in large saucepan 20 min. or until vegetables are tender.
  • Drain vegetables; return to pan. Add milk; mash until vegetable mixture is light and fluffy. Spread over meat mixture to resemble a frosted cake.

My husband and I love this, no matter what season..the salsa gives perfect flavor..ADD a layer of shredded chedded between the mean and mashed potatoes for a great flavor. Can also sub the salsa w/ketchup. I use ready to make mashed potatoes t make this easier since I dont have time to make real ones. You can use any flavor mashed pots for variety. ENJOY!

Rated 5 out of 5 by from I made some changes to this recipe and it came out really good. I made some changes to this recipe and it came out really good. Instead of mashing the potatos and cauliflower and sliced the potatos and put them with the cauliflower on top of the meat and sprinkled some cheese over it. I put it back in the oven for 5 min and it came out great that way. I will definitely make it again.
