  • Combine 2 cups flour, sugar and yeast in large bowl; add warm water. Beat with mixer on low speed 1 min. or until blended, scraping sides of bowl often. Cover with plastic wrap. Let stand in warm place 1 hour or until bubbly. Uncover.
  • Stir in 1 cup cheese, oil, chives and salt. Gradually stir in 1-1/2 cups of the remaining flour until mixture forms soft dough.
  • Place on lightly floured surface. Knead dough until smooth and elastic, gradually adding some of the remaining flour if dough is too sticky. Place dough in bowl sprayed with cooking spray. Turn dough over. Cover with plastic wrap. Let rise in warm place 45 min. to 1 hour or until doubled in volume. Uncover.
  • Shape dough into 12-inch long football-shaped loaf by stretching sides on lightly floured surface. Place loaf, smooth side up, on baking sheet sprayed with cooking spray. Sprinkle with some of the remaining flour. Loosely cover with plastic wrap. Let rise in warm place 45 min. or until doubled in volume.
  • Place 1 oven rack in middle of oven and second rack on bottom of oven Place 9-inch square pan on bottom rack; fill with hot water up to 1/2 inch from top. Heat oven to 450°F. Spray loaf with cool water then sprinkle with remaining flour. Cut 1/2-inch-deep slash down middle of loaf. Place remaining cheese in slash.
  • Bake 10 min.; reduce oven temperature to 400°F. Bake 20 to 25 min. or until loaf sounds hollow when tapped and is golden in color. Remove from baking sheet; cool on wire rack.

How to Activate Yeast

Use an instant read thermometer to check the temperature of water or other liquids that are added to yeast when baking breads, rolls and coffee cakes. The proper temperature ensures that the yeast is activated but not killed. If the yeast is dissolved separately, the liquid temperature should be 105° to 115°F. When the yeast is combined with dry ingredients first, the liquid's temperature should be 120° to 130°F.

How to Store Bakery or Homemade Bread

Store fresh bread at room temperature for up to 3 days. For longer storage, wrap bread loaf tightly in foil and store in freezer-weight resealable plastic bag in the freezer. Do not refrigerate bread, since refrigerated bread becomes stale very quickly.
