  • Bring water and 1 Tbsp. oil to boil in large saucepan. Add stuffing mix; stir just until moistened. Remove from heat. Cover; let stand 5 min.
  • Meanwhile, heat remaining oil in large skillet on medium heat. Add onions and garlic; cook and stir 3 min. or until crisp-tender. Add arugula; cook 3 to 4 min. or until it starts to wilt, stirring frequently.
  • Fluff stuffing with fork. Stir in arugula mixture.
