Cutting boneless skinless chicken breasts into pieces can be a slippery task. Make it safer and prevent the knife from slipping by cutting the chicken while it is partially frozen. The firmer chicken is much easier to cut and handle.
Serve with hot cooked brown rice or whole wheat pasta.

The chicken was plain. If I make it again I will add more spices. The kids were didn't like that it was pink. I added more cashews and some corn. I do want to try to make it again.
Loved it. I have changed recipe a little (especially more garlic) and it's a family favorite.
