what you need

1/2
cup vegetable broth, divided
1/2
cup sliced green onions
1
Tbsp. minced peeled gingerroot (optional)

Tbsp. minced garlic
6
cups chopped broccoli
2
cups chopped red pepper

Tbsp. soy sauce

cups PLANTERS Dry Roasted Peanuts, chopped

cups hot cooked brown rice

Make It

HEAT 1/4 cup of the vegetable broth in large skillet on medium-high heat. Add green onions, ginger and garlic; stir-fry 1 to 2 min. or until tender.

ADD broccoli, red pepper, soy sauce and remaining 1/4 cup vegetable broth. Bring to boil; reduce heat to low. Simmer 5 to 6 min. or until broccoli is tender, stirring occasionally. Stir in peanuts.

SERVE vegetable mixture over hot cooked rice.
