  • Toss chicken with 1/4 cup marinade and garlic. Refrigerate 20 min. to marinate. Meanwhile, cook spaghetti in large saucepan as directed on package.
  • Mix dressing, remaining marinade and ginger. Remove chicken from marinade mixture; discard marinade mixture. Cook and stir chicken, peppers and carrots in large nonstick skillet on medium heat 8 to 10 min. or until chicken is done. Stir in dressing mixture.
  • Drain spaghetti; return to pan. Add chicken mixture and 3 Tbsp. cilantro; mix lightly. Spoon into bowl; sprinkle with remaining cilantro.

Creative Leftovers

Refrigerate any leftovers. Serve the next day cold as part of your lunch or supper.

Rated 5 out of 5 by from My husband LOVED this! My husband LOVED this! I made it for just the two of us, so I just halved the recipe and it worked perfectly. I'll probably use a little less cilantro next time, and maybe marinade the chicken for longer than 20 minutes, but really amazing as it is. I served it with rice and steamed broccoli, and will definitely be making it again!

It was great and everyone was looking for seconds...but it was all gone (family of 5) So next time I think I'll use angel hair pasta and maybe throw in some baby corn or water chestnuts! Yummy!

I used garlic powder instead of garlic cloves. I added lemon pepper to the sauce. It is also good with rice instead of noodles.

This recipe was okay, but definitely not worth the time it took to make it. Maybe we are just slow at chopping and dicing, but it took us way longer than the estimated time length.
