  • Thread shrimp onto 8 skewers; sprinkle with seasoning, turning skewers to evenly coat both sides of each shrimp. Grill 3 min. on each side or until shrimp turn pink.
  • Cover 4 large plates with spinach; top with next 6 ingredients.
  • Drizzle with dressing; top with shrimp.

Look for Cajun seasoning, also called Creole seasoning, in the spice section of the supermarket.


If using wooden skewers, soak them in water 30 min. before using them to prevent them from burning on the grill.

    Simply wonderful...and healthy! I made this recipe as recommended, but added grilled steak strips and it was amazing! My family wanted to lick the plate clean!

    This recipe is just excellent...very healthy and filling. It had LOTS of crunch. I made the recipe as stated but I did not slice up the sugar peas, I blanched them and tossed them in whole room temp. This also would be delicious with grilled chicken...other fish and even pork tenderloin. Other salad dressings would work too...I just loved it!
