  • Fill pie plate with warm water. Add 1 rice paper sheet; let stand 20 sec. Transfer to clean work surface.
  • Spoon 1/4 of the turkey onto center of paper; top with 1/4 of each of the remaining ingredients. Fold in opposite sides of rice paper, then roll up burrito style.
  • Repeat with remaining ingredients. Cut in half to serve.

Special Extra

Add 1/4 cup fresh mint leaves to the spring roll filling. Or, substitute it for the cilantro.
