Loved it! Not only is this so delicious, but its a great dish to make when company is over because it is intended to be served cold - no more worrying about serving soggy, luke-warm veggies. This is going to be my go-to veggie dish from now on when we have company.
Made this for the first time last year and thought it was delicious. It is a great dish to bring to a back yard gathering also. Have shared it with several of my friends. I have used green onion when I did not have the red,does just as well.
