What You Need

2
 cucumbers, halved lengthwise, seeded
1/4
tsp. salt
2
cups plain nonfat Greek-style yogurt
2
cloves garlic, minced
1
Tbsp. lemon juice
1
Tbsp. dill weed

Make It

SHRED cucumbers; place in sieve. Sprinkle with salt. Let stand 1 hour. Wrap in paper towels; squeeze to remove excess moisture.

MIX remaining ingredients in large bowl. Add cucumbers; mix lightly.

REFRIGERATE 1 hour.

Sprinkle with chopped fresh parsley before serving.
Make Ahead
Dip can be stored in refrigerator up to 24 hours before serving. (Dip will thicken upon refrigeration.)
