Rinse wheat berries; place in medium bowl. Add enough water to cover beans by a few inches. Let stand at room temperature 8 to 10 hours. Drain, then use as directed.
Test for doneness by removing a grain and tasting. It will be chewy with a soft center.
Wheat berries will double in size when they are cooked.

I've cooked wheat berries for years and have never soaked them - and they cook up very nicely in 50-55 minutes. This cuts off a lot of time in preparing - no unnecessary soaking.
I soak the wheat berried the night before to cut down on the cooking time- Otherwise I use a pressure cooker. People LOVE this dish. I use it to introduce WHOLE GRAINS as recommended on MyPyramid grain group. Few people know what an actual grain (or berry) of wheat looks like- let alone taste like! This is a MUST TRY recipe!
