  • Reserve half the tomatillos and 1/4 cup cilantro for later use. Place remaining tomatillos and cilantro in blender. Add all remaining ingredients except sour cream; blend until smooth.
  • Pour tomatillo mixture into bowl. Add reserved tomatillos; mix well.
  • Refrigerate 1 hour.
  • Serve topped with reserved cilantro and sour cream.

Preparing Tomatillos

Tomatillos look like small green tomatoes with a papery husk or shade-like covering. Several are usually attached to a vine when purchased. Detach tomatillos from the vine and peel away the husks to reveal the fruit. Wash fruit in cold water, then slice or chop and use as directed in recipe.
