  • Sprinkle gelatine over cold water in medium bowl. Let stand 1 min. Add boiling water; stir 2 min. until gelatine is completely dissolved.
  • Mix dressing and lime juice until blended. Mash avocado in medium bowl. Add sour cream and 1/4 cup dressing mixture; mix well. Gradually add gelatine, whisking constantly until well blended.
  • Pour into 8x4-inch loaf pan sprayed with cooking spray.
  • Refrigerate 4 hours until firm. Meanwhile, combine remaining ingredients, including remaining dressing mixture. Refrigerate until ready to use.
  • Unmold salad. Serve topped with vegetable mixture.

Substitute

Substitute chopped red peppers for the tomatoes.

Note

For best results, serve this delicious side salad within 24 hours of preparing.
