I used Sun Dried Tomato Pesto with Pine Nuts instead of Sun dried Tomatoes, by accident, and it turned out rather well. Everyone loved this recipe.
My hubby does not care for rice, so I used diced, cooked potatoes, and a little more liquid, as potatoes absorb moisture.
