Bacon Brittle

What You Need

slices  OSCAR MAYER Fully Cooked Bacon, cut into 1/4-inch pieces
tsp.  ground red pepper (cayenne)
cup  pepitas
cup  PLANTERS Pecan Pieces
cup  sugar
cup  light corn syrup
cup  water

Make It

GREASE baking sheet; set aside. Spread bacon onto microwaveable paper towel. Microwave on HIGH 1 min. Transfer bacon to medium bowl. Immediately add pepper; toss to coat. Add pepitas and pecans; mix lightly.

MIX sugar, corn syrup and water in medium saucepan. Bring to boil on medium heat, stirring constantly. Cover with lid. Cook 2 to 3 min. or until sugar is dissolved. (Do not stir.) Remove lid from saucepan. Continue boiling sugar mixture 20 min. or until mixture reaches hard-crack stage (300ºF to 310ºF). Remove from heat. Immediately stir in bacon mixture; pour onto prepared baking sheet. Use greased spoon or spatula to spread bacon mixture into even layer; cool completely.

BREAK brittle into bite-size pieces. Store in tightly covered container at room temperature.

How to Test for Brittle Doneness without Candy Thermometer
After syrup is uncovered and has boiled about 15 min., use a wooden spoon to drop a small amount of the hot syrup into small bowl of cold water. Touch the syrup with your fingers. If it is soft and forms a ball, the syrup has reached the soft-ball stage. Continue boiling the syrup, frequently retesting for brittle doneness. (Watch carefully. The temperature will quickly rise to the hard-crack stage.) Once the syrup becomes thread-like and hard to the touch in the cold water, the syrup has reached the hard-crack stage. Remove saucepan from heat and continue as directed.
