  • Pour dressing over chicken in shallow dish. Refrigerate 30 min. to marinate.
  • Heat oven to 400ºF. Cook bacon in large skillet on medium heat until crisp. Remove bacon from skillet, reserving 1 Tbsp. drippings in skillet. Drain bacon on paper towels.
  • Add potatoes and onions to reserved drippings; cook 5 min., stirring occasionally. Remove from heat. Crumble bacon. Add to potato mixture; mix lightly. Spoon into 13x9-inch baking dish. Remove chicken from marinade; discard marinade. Place chicken over potato mixture.
  • Bake 55 min. to 1 hour or until potatoes are tender and chicken is done (165ºF). Top with cheese and parsley.

Serving Suggestion

Serve with cooked fresh green beans.

Special Extra

Mix 1/2 tsp. hot pepper sauce with ranch dressing before pouring over chicken.

This reminded me some of Alice Springs Chicken from Outback Steakhouse, but it needs some improvements to be as good as that. My 3 main commetns are: 1) I didn't get any flavor out of the ranch dressing as a marinade. 2) I think you could use any shredded cheddar on this, not just the specific one they suggested. 3) And I would definitely NOT use thighs on the bone again. It was too much work for this type of dish to fight with bone. I would make this again but with the suggested changes.

I made this last night for dinner and it was wonderful, relatively quick and easy to make. I used white meat chicken tenders so the baking time was cut down. Everyone loved it but I think the next time I prepare it I will use more bacon. You can never have too much bacon or cheese in a dish where I am concerned. Everyone raved on about how good the potatoes were. I might just make the potatoes as a great side dish to other meats too.

Rated 3 out of 5 by from This recipe was pretty good. This recipe was pretty good. I used chicken breasts instead and the meat was sooo juicy.I marinated the meat over night and while I was at work. I added mrs dash garlic and herb season salt to the potatoes and onions and then sprinkles some over top of the chicken. Also used the whole bag of cheese. Next time I will use more bacon. I also didnt have parsley, next time I may try that too.

Rated 5 out of 5 by from I made this last night, as is, didn't change a thing. I made this last night, as is, didn't change a thing. It was wonderful! I had to prep the night before, cooked the bacon, taters and onions and put in dish then in fridge. Marinaded the chicken overnight. We all really liked it, even my very picky son. I think a dab of BBQ sauce might be good on top too. Will definitely make again.

Rated 4 out of 5 by from Very good flavor! Very good flavor! I wasn't sure about the thighs but they were excellent. I love red potatoes so this will be a keeper. I did add buffalo sauce to the ranch and couldn't taste it, so I might add more than 1/2 tsp next time, like the magazine said. Overall, was very flavorful and our family loved it. Even my picky 2 yr old.

Rated 4 out of 5 by from Hubby is an old-fashioned eater. Hubby is an old-fashioned eater. Doesn't care for things too spiced. Just likes his food plain and simple and this fits the bill. Good use of thigh meat as breast meat might get too dry. Potatoes with bacon and cheese would also make a great side dish without the chicken.

I lined my baking dish with non-stick foil and also spread just a little bit of the ranch dressing on the foil. Everything came out great! My husband loved it. I will definitely make this again. This was delicious and a hit with my kids; I substituted olive oil for the bacon grease to fry the potatoes; I also sprinkled the potatoes with seasoned salt and pepper and some parmesan. The addition of some wing sauce to the ranch really made it great.
