What You Need

 hard-cooked eggs, coarsely chopped
1
 red pepper, finely chopped
2
 green onions, chopped

slices  OSCAR MAYER Bacon, cooked, chopped

 RITZ Crackers, coarsely crushed
1/3
cup  KRAFT Real Mayo Mayonnaise

 large ancho peppers, hydrated

Make It

MIX all ingredients except ancho peppers.

MAKE small lengthwise cut in side of each ancho pepper; remove and discard seeds.

FILL peppers with egg mixture, adding about 1/2 cup to each.

How to Hydrate Ancho Peppers
Cook peppers in boiling water in saucepan 10 min. or until slightly tender; drain. Cool.
Serving Suggestion
For added color and texture, serve with a mixed green salad tossed with your favorite KRAFT Lite Dressing.
