Sweet potatoes vary in size. Large potatoes will yield more slices per potato. Adjust the number of bacon slices as needed and cook in batches, if necessary.

These really looked good! But when I made them, I had to cook them for a lot longer than stated here and I didn't like that the sides remained fatty and uncooked - I like the entire strip of bacon to be cooked, that's just my preference.

I did make these and they turned out great very delicious, and I will make them again.
