  • Heat oven to 350°F.
  • Pierce each potato in several places with fork or sharp knife. Bake 1 hour or until tender. Cool 5 min.
  • Cut potatoes lengthwise in half; scoop out centers into medium bowl, leaving 1/8-inch-thick shells. Add cheese, butter, milk and pepper to potatoes in bowl; mash until desired consistency. Stir in bacon and chives; spoon into potato shells. Place in shallow baking dish.
  • Bake 30 min. or until heated through.

My wife was mocking us for the amount we were making for a family BBQ. Afterwards she commented that she thought a fight might break out over who was getting to take home the few remaing. We CoJack cheese and have the sour cream standing by for those who are so inclined.

I also added sour cream to the mixture and used green onions fron my garden, because i was out of chives. Will be making again. I didnt think it was that time consuming. I put the taters in the oven while i cooked my meatloaf. muli-tasking!!!

I used green onion instead of chives, I baked it for a bit longer than suggested in the recipe, and I topped it off with some extra cheddar cheese sprinkled on top, which I allowed to melt before serving it with corn on the cob and grilled steak...whatta meal! I'll definitely make these again!

The first time I made these I didn't think there was enough potato mixture to add back into the skins, so the second time I prepared these I boiled a few extra potatoes on the stove and combined them with the baked potatoes. This really filled up the skins. Very Yummy!
