  • Heat oven to 350ºF.
  • Line 15x10x1-inch pan with parchment paper, with ends extending over shortest sides of pan. Spray with cooking spray.
  • Beat eggs, milk and flour in large bowl with whisk until blended. Stir in next 4 ingredients. Pour into prepared pan. Bake 14 to 16 min. or until edges are almost set. Top with cheese; bake 2 min. or until melted.
  • Roll up omelet immediately, starting at one short end and peeling off paper as omelet is rolled. Place on platter; cut into slices. Serve with salsa.

Substitute 6 finely chopped slices OSCAR MAYER Baked Cooked Ham for the crumbled cooked bacon.

Not necessarily the ingredients listed but the concept of cooking an omelet in the oven. I always keep grated leftover ham in the freezer and make this with the ham and cheese and add whatever else I have on hand. A tip for easier rolling-use the paper to lift it up and roll. Everyone is always impressed with this dish!

Rated 5 out of 5 by from I have made this recipe time and time again. I have made this recipe time and time again. I have used cooked, crumbled sausage in place of the bacon, too. This is a great low-carb dish. I'm not real fond of oregano, so just deleted it! Once I cut the omelet into 8 pieces, I place each piece in a Ziplok vacuum qt. sized bag, vacuum out most of the air (don't squish the omelet slice) and freeze. This way I have a quick breakfast just waiting to pop into the microwave for 30 to 60 seconds, after removing from the Ziplok bag, of course.

I have 5 kids and a few of them are very picky and don't like "colored" stuff in food, like peppers, etc. Even they had seconds and thirds. The only thing I did differently was adding a few shakes of salt and pepper into the egg mix before pouring it into the pan. My family decided unanimously that we should have this every weekend for brunch. It was very simple and quick to make.

I was looking for a quick and easy recipe for a busy night and this was great. Made it with bacon, onion, fresh spinach leaves and whole wheat flour. Looked as tasty as the picture. Will definitely make again...maybe italian next time w/ pepperoni, green peppers, onions, mushrooms, ital. cheeses...oh, the possibilities!

Definitely needs some seasoning. Although I didn't have any trouble rolling it up, the melted cheese between the layers caused the roll to separate and flatten. Perhaps the cheese should be added to the egg mixture. Think I'll look for a different recipe to serve.

I didn't have red bell pepper on hand but hope to next time. Too thick to roll up, so I cut it in half and stacked it and served it like a quiche. It was yummy and we'll cook it again! Note, it took about seven minutes longer to bake than recipe said.

I used egg beaters and since I didn't have any bacon, I used ground sausage and chunks of ham. It was delicious. The eggs were so creamy! Also I didn't have any parchment paper os tried tin foil. The seam allowed some small amoun of egg to seep between the 2 layers of foil. Will definitely make it again.

Rated 5 out of 5 by from DELICIOUS recipe! DELICIOUS recipe! Used 4 eggs with yolk and 4 without to save calories and fat. Still had loads of flavor. Will try making it with 8 egg whites next time. I used a 13x9 in pan so it was thicker than the recipe plans for, but I rolled from the long sides in so that it was easier to handle.
