COOK and stir bacon in large skillet until crisp. Remove bacon from skillet with slotted spoon; drain on paper towels. Discard all but 1 Tbsp. drippings from skillet. Add potatoes, onions and thyme to reserved drippings; cook 5 min. or until potatoes are golden brown and tender, stirring occasionally. Remove from heat. Stir in bacon and pepper; cool.
HEAT oven to 425ºF. Unroll pizza dough on lightly floured surface; pat into 16x12-inch rectangle. Cut into 6 rectangles; top with potato mixture to within 1/2 inch of edges. Sprinkle with cheese. Fold dough rectangles in half; seal edges with fork. Place on baking sheet sprayed with cooking spray. Whisk egg and honey until blended; brush onto dough.
BAKE 15 min. or until golden brown.
