  • Heat oven to 400°F.
  • Place tortillas in single layer on baking sheet sprayed with cooking spray.
  • Top half of each tortilla with 1/4 each of the remaining ingredients; fold in half. Press lightly to secure.
  • Bake 8 to 10 min. or until edges are lightly browned.

My version: I "saute" onions in a bit of butter in the microwave and use green chile and browned (or leftover) chicken bits and of course cheese, but first I spread refried beans on the tortilla! Cover with another tortilla. I butter a cast iron griddle used for just this purpose to brown both sides of the "quesadilla." Cut with a pizza cutter and serve with salsa, sour cream, and shredded lettuce.

My kids and I don't like them, but my husband does. I did have sour cream with them. That was really good. I have to make these quick or I won't have any bacon left to go into them because my kids love bacon.

I used bacon strips diced, cooked in a pan and drained on paper towels (just cause I perfer real bacon). We made them during halftime and ate them with sour cream and guacamole....great football food.

YUM!
