  • Heat oil in medium nonstick skillet on medium-high heat. Add potatoes and onions; cook 8 to 10 min. or until potatoes are browned, stirring occasionally. Remove from heat. Spread potatoes to evenly cover bottom of skillet.
  • Whisk eggs in small bowl. Stir in bacon and pepper; pour over potatoes. Cover.
  • Cook on medium-low heat 10 min. or until egg mixture is set. Top with cheese and tomatoes; cook, covered, 3 to 4 min. or until cheese is melted.

Serving Suggestion

For a delightful brunch idea, serve this skillet dish with a seasonal fresh fruit salad and bran muffins.

Stack bacon slices; cut into pieces with kitchen shears.

Variation

Prepare using 10 slices OSCAR MAYER Center Cut Bacon, cooked and drained, and/or substituting 1/2 cup chopped green peppers for the onions.

Made this for supper tonight with a few minor changes (omitted tomato and green onion; used white onion, swiss chard, broccoli combined in food processor first). It was good, but it needs salt in the has brown portion. Luckily, I added more seasonings than just the pepper to the egg part. Next time though-salt those has browns! too bland!

Next time I will add 1 or 2 more cups of hash browns just to make the dish more substantial as I made the dish for dinner as I usually do with breakfast dishes. I also made Applesauce Bran Cereal Muffins from the Kraft web site and they were excellent with this dish.

Rated 5 out of 5 by from Terrific! Terrific! My picky family loved it. The only modification I used was an additional egg and a full cup of cheese (half of which was diced American). I did add a few fresh chives near the end. If you have trouble getting the eggs to set, just gently lift the edges with a spatula & tilt your pan swirling the eggs to the outsides.

Rated 4 out of 5 by from We did like this recipe. We did like this recipe. I have a daughter that is VERY picky eater and she gave it a two thombs up. I did read reviews and did so changes. I put the garlic salt and pepper on the hash browns before the egg mix. Also my husband flipped it so that it would be even. We used salsa on top. Yummy!! :)

I cooked my own bacon instead of using the pre-cooked, and then used 2 Tbsp. of the bacon grease instead of oil for cooking the potatoes. The portion size isn't big; I served this with grits and melon to round out the meal. We'll definitely make this one again.

I used turkey bacon instead of regular bacon and I would not use as much bacon next time. I will definitely make this dish again. It would also make a spectacular dish for supper/dinner also.

On the top I used salsa instead of the tomatoes, and added a small dollop of sour cream on the slices when I served them. It was a big hit and quite delicious!

This was really good and easy-used thawed frozen shredded hash browns and cooked until a little crispy-also used crumbled turkey sausage (1/2 bag Jimmy Dean) and it worked really well. Added the chesse the last 2-3 mins of the overall cooking time and we all loved it.
