Bacon-Wrapped Shrimp Kabobs with Orange-Chipotle Sauce recipe

In this classic summertime kabob recipe, bacon and shrimp are skewered and dressed to grill in an orange-chipotle sauce.

What You Need

cup  orange marmalade
Tbsp.  water
Tbsp.  chopped canned chipotle peppers in adobo sauce
slices  OSCAR MAYER Bacon
  uncooked deveined peeled medium shrimp (1-1/4 lb.)

Make It

HEAT grill to medium-high heat.

MIX first 3 ingredients until blended; set aside. Place bacon slices on microwaveable plate; cover with paper towel. Microwave on HIGH 4 min. or until partially cooked. (Bacon will be slightly limp.) Drain bacon; cool slightly.

THREAD 1 bacon slice and 3 shrimp onto each of 12 skewers, placing shrimp between folds of bacon.

RESERVE half the sauce. Grill kabobs 5 to 6 min. or until bacon and shrimp are done, brushing with remaining sauce for the last 2 min. Warm reserved sauce; serve with kabobs.

Partially cook bacon in skillet on medium heat 6 min. Drain; cool slightly. Use as directed.
How to Purchase and Store Raw Shrimp
Fresh shrimp should be firm, moist and translucent and should smell like the sea. Avoid those with black spots and any trace of ammonia odor. They can vary in color from grayish-green to pinkish-tan to light pink. Place in a bowl (if wrapped in plastic, punch a few holes in the plastic) and store in the coldest part of the refrigerator up to 1 day.
If using wooden skewers, soak skewers in water for 30 min. before using to assemble kabobs to prevent them from burning on the grill.
