  • Preheat oven to 400ºF. Cut 4 of the bacon slices in half; set aside. Beat eggs and milk in medium bowl with wire whisk until well blended. Crumble remaining 4 bacon slices. Add to egg mixture along with the cheese, peppers and onions; mix well.
  • Pour into 8-inch square baking dish sprayed with cooking spray.
  • Bake 20 to 25 min. or until center is almost set. Top evenly with reserved bacon slices. Bake an additional 5 min. or until knife inserted in center comes out clean.

Substitute

Substitute 2 cups cholesterol-free egg product for the beaten eggs.

Shortcut

Crumble all of the bacon, stirring it all into the egg mixture before pouring into baking dish. Increase the initial bake time to 25 to 30 min. or until knife inserted in center comes out clean.

Rated 5 out of 5 by from I substituted turkey bacon, used half as much becuase half burned. I substituted turkey bacon, used half as much becuase half burned. I didn't put the half slices on top. I added salt and pepper to compensate for the missing bacon and used red and green pepper. This was amazing. I love regular bacon but my BIL doesn't eat pork hence the substitution. I am making it again today with turkey bacon because I liked it so much. Also, this was for a family brunch and I doubled the recipe and used a 13x9 dish and it was perfect.
