Baked Catfish with Lime-Cucumber Salsa recipe

No need to fire up the grill for this catfish recipe. It gets its flavor from a freshly made lime-cucumber salsa and is baked with a breadcrumb topping.

What You Need

  catfish fillets (1-1/2 lb.), cut in half
pkg.   (6 oz.) FRESH TAKE Classic Four Cheese Recipe Cheese Breadcrumb Mix, mixed together
cup  KRAFT Zesty Italian Dressing
 Juice from 1 lime
 cucumber, peeled, seeded and chopped
cup  slivered red onions
cloves  garlic, minced
 serrano chile, stemmed, seeded and thinly sliced
 avocado, cut into 6 slices

Make It

HEAT oven to 375ºF.

MOISTEN fish with water. Add, 1 piece at a time, to FRESH TAKE bag; lightly press cheese mixture onto both sides of fish. (Fish will not be completely coated.) Place on baking sheet sprayed with cooking spray. Top with any remaining cheese mixture.

BAKE 20 min. or until fish flakes easily with fork. Meanwhile, combine all remaining ingredients except avocados.

SERVE fish topped with cucumber mixture and avocados.
