  • Heat oven to 400°F.
  • Use pulsing action of food processor to process half the cauliflower until coarsely chopped; spoon into large bowl. Repeat with remaining cauliflower.
  • Heat oil in large nonstick skillet on medium heat. Add cauliflower; cook 8 to 10 min. or until lightly browned, stirring occasionally. Stir in taco seasoning mix. Add carrots and next 3 ingredients; mix well. Cook 1 to 2 min. or until heated through and slightly thickened, stirring frequently. Remove from heat.
  • Stack tortillas; wrap in paper towel. Microwave on HIGH 1 min.
  • Spoon cauliflower mixture evenly down centers of tortillas; roll up. Place, seam sides down, on baking sheet sprayed with cooking spray.
  • Bake 10 to 12 min. or until taquitos are crisp.
